While we’re huge fans of creating sweet recipes, like brownies and parfaits, our other love is salads! The fun thing about salads is that the possibilities are endless, but we usually have certain things we look for in every salad.
Our list includes:
• at least one green vegetable (or three or four)
• something crunchy
• something juicy
• a variety of color
• something creamy
• a dressing of some sort
This Nectarine Avocado Salad checks all things off the list and is perfect as a light snack or part of your lunch/dinner. We believe avocadoes are essential to all salads and figured a salad centered around this creamy, beautifying fruit can only be a good idea. In addition to the crunchy vegetables and sweet nectarines, we added pumpkin seeds for a little iron and magnesium boost. Our dressing is simply a squeeze of lime plus some chopped mint leaves to freshen up the salad. All together, salad never tasted this good!
- 1 nectarine
- 1 avocado
- ⅓ medium zucchini
- ⅓ medium cucumber, peeled
- 2 Tbsp. pumpkin seeds
- ~10 mint leaves, torn into little pieces
- Juice from half a lime
- Dash of salt
- Chop the nectarine, avocado, zucchini, and cucumber into small cubes and place in a bowl.
- Add the pumpkin seeds, mint leaves, lime juice, and dash of salt.
- Mix everything together and enjoy!
