I wanted to make a bread that was healthy and easy because sometimes eating on the go can challenge my eating habits. Also I had way too many zucchinis and I didn’t want them to go bad!

Health benefits: This is mainly for a happy tummy and to calm any sweet tooth.


-2 cups of almond flour

-1 tsp baking soda

-1 tsp baking powder

-1 ½ tsp cinnamon

-½ teaspoon salt

-1 Large zucchini shredded

-1 carrot shredded

-2 tbs coconut sugar

-¼ cup of honey

-½ plain goat yogurt or coconut yogurt

-2 large eggs

-6 tbs coconut oil

-Handful of dark chocolate chunks

Directions: Put the wet ingredients in a bowl and make sure to get the excess water out of the shredded zucchini. Then mix the dry ingredients together. Put it in a bread pan and bake for 40-45 at 350F.

After it cools I drizzle some nut butter on it. (almond butter or sunflower butter) Enjoy!
